How It's Made

Masak kicap is comfort food at its purest — chicken braised in dark soy sauce with whole spices until the sauce thickens into a rich, sweet glaze. The star anise and cinnamon give it a warmth that is unmistakably Malay. We let the chicken simmer low and slow until it practically falls apart, soaking up every drop of that dark, fragrant sauce.
